In the study, mice were fed a low-calorie, low-carbohydrate diet to see how it impacted the presence of beta-amyloid peptides in the brain. It seems that diet did have an impact on the build up of peptides in the brain. Less saturated fat caused lower concentrations of peptides while more saturated fat increased the peptides. Alzheimer's disease is accompanied by the buildup of plaque in the brain. This is caused by increased amounts of beta-amyloid peptides which in turn stimulate a protein, called SIRT1, which affects aging.
